Two Recipes with Strawberries!

Here are some fun new recipes with strawberries that I wanted to share in time for Strawberry season. Thanks to LeapFrog for sharing them! Should be a sweet treat for kids and adults alike!

Strawberry Avocado Couscous Salad

Mix together 1/2 cup of oliver oil with 1/2 cup apple cider vinegar, the zest of two limes, four tablespoons of freshly squeezed lime juice and 2 tablespoons of sugar for a vinaigrette. Set aside.

In a medium saucepan, cook couscous according to the package directions. After cooking, let cool. Then in a large bowl, add two cups of the cooled couscous, two diced avocados, 1 cup of thawed corn, 1 cups of sliced strawberries and (optional) 44 tablespoons of pine nuts. Stir in the vinaigrette, and serve immediately!

Strawberry Lime Water

Mix 10 cups of water with fresh strawberries in a pitcher. Then add thinly sliced lime wedges, from one or two limes, and chopped mint leaves. Leave in fridge overnight and serve cold the next day!
